War on cheese?

Yes, the Feds have now targeted the artisan cheese industry.

A sense of disbelief and distress is quickly rippling through the U.S. artisan cheese community, as the federal Food and Drug Administration (FDA) this week announced it will not permit American cheesemakers to age cheese on wooden boards.

Never mind that these cheeses have been ripened that way for hundreds of years, and never mind that it has been scientifically demonstrated to be safe. Our betters have decided that the practice must stop.

What’s next, wines aged in wooden barrels?

As to why people continue to put up with such tyranny I wish I knew.

    There will come a tipping point.
